Comfort Food: Vegetarian Meatloaf.
The boyfriend and I have been wanting to veggie-fy meatloaf for a good bit now. My mom makes amazing meatloaf, and since going vegetarian, I haven't been able to eat it.
He mixed together some Lightlife substitution ground meat, 4-5 slices of whole wheat oat and nut bread, ketchup, an egg, onion, and garlic.

We also got some golden russet potatoes from New Leaf Market today. We cut them up into chunks, boiled them, and mixed them with butter and (surprise!) mayonnaise. I'm slightly lactose-intolerant, so we never really have milk on hand. The mayo made the potatoes extra-creamy!
The meatloaf was put in the oven at 350 degrees fahrenheit for nearly 45 minutes. It was very flavorful and moist, but a single slice was way more than enough for me. So filling!
