We've been trying to eat at home more often lately. This involves buying more fresh vegetables, which has been wonderful. I cut up a bunch of leftover veggies last week, then tossed them with olive oil, some salt, pepper, and Old Bay. It was extremely simple and delicious.
At our local co-op, I bought this huge bunch of organic kale. They'd been getting smaller bunches lately, so I was happy to see this one. Kale has got to be my favorite green of the moment.
I loved my mom's Shepherd's Pie as a kid. It was the perfect comfort food-- ground beef, mixed vegetables, lots of gravy, all covered with fluffy mashed potatoes. I no longer include the ground beef, but I threw together some mixed vegetables (more than when I was a kid!) and some vegetarian gravy, then topped it with homemade mashed red potatoes. We added some veggie sausage just because we could.
The Publix by our house recently added a British section to the ethnic aisle. Yum! There were loads of sweets, but I picked up a can of Heinz beans for a classic: Beans on toast! I was so excited to see the beans were completely vegetarian, so this made for an easy dinner when the boyfriend was out of town.

I actually really want to see a recipe for the first photo! It looks so unbelievably tasty... but easy to make for lunch when I don't have a ton of time :)

This all looks so delicious. Thank you for reminding me about Old Bay-- I love the flavor, but never thought to put it on roasted veggies.
