meal plan : week 17

Can I just begin by saying last week was delicious? Everything turned out great, and I even had a friend over for dinner who ate some food outside her comfort zone and loved it. Yay! We ended the week with a trip to Disney for Paul's birthday, which of course meant more food. Lunch (complete with custom Meeko cake) was at Sanaa of the Animal Kingdom Lodge. It features a blend of African and Indian flavors, looking out over a mini Savanna filled with giraffe, zebras, and more. Awesome. Later, we had dinner at Tokyo Dining in Epcot where we stuffed ourselves with sushi. Mmmm...

But onto this week's eats!

monday: leftover potato & leek soup
tuesday: seared ahi tuna with curried bulgur wheat salad (paul's homemade birthday dinner!)
wednesday: indian lentil-cauliflower soup, p. 133 of the Oh She Glows Cookbook
thursday: cauliflower & parsnip mashed potatoes with mushroom gravy and tofu steaks
friday: spiced red lentil & kale soup, p. 131 of the Oh She Glows Cookbook
