We did pretty great last week with our meal plan! The only thing I didn't make was the vegan black bean burgers, so those are back on this week's menu. The "easiest Indian stew" was a bit of a letdown, but the lazy veggie pot pie was delicious! I loved that it was slightly deconstructed and easy to throw together.
Onto this week's eats!
Monday: Black bean burgers with kale, carrot, and cabbage slaw
Tuesday: Coconut lentil soup with lemongrass & ginger
Wednesday: Hoppin' John bowl with red hot tahini & kale
Thursday: Sushi salad with baked tofu
Friday: Curried chickpeas with spinach & rice
