Last week was delicious! We made everything on our meal plan, and the raw veggie nori wraps were especially amazing. I made them a tad small, so they ended up as sushi instead of what I would call "wraps".
I was pleasantly surprised by the curried chickpea salad. It had such great flavor! I will definitely make it again, but probably not for dinner. It's more of a lunch, I think.

tuesday: big vegan bowl with tofu
wednesday: lentil soup
thursday: thai kale salad with lentils & peanut dressing
friday: spicy roasted bok choy with cauliflower rice & tofu
